A basic pineapple cake recipe is an upside-down cake that uses a boxed yellow cake mix, maraschino cherries, pineapple slices, brown sugar and butter. Another simple recipe is a pineapple loaf cake that calls for coconut, butter, flour, sugar, eggs and sour cream.
To make a basic pineapple recipe, drain the juice from 1 can of pineapple slices and save it. Prepare a boxed yellow cake mix according to the directions using the pineapple juice in place of water. Meanwhile, melt 1/4 cup of butter in the bottom of a cake pan in the oven. Spread 1 cup of brown sugar over the butter. Arrange the pineapple slices and cherries in the brown sugar. Pour the batter into the cake pan, and bake at 350 degrees Fahrenheit for 42 to 48 minutes.
After the cake is done baking, loosen the edges with a knife, then put the cake on a serving plate upside down. Do this by turning the cake pan over so that the cake falls out of the pan, but keep the cake pan on top for 5 minutes. Allow the cake to cool before serving.
To make a pineapple loaf cake, beat together 1/2 cup of softened butter, 1/2 teaspoon of baking soda, 1 cups of sugar and 1/2 teaspoon of salt. Add the 3 large eggs, and mix in 1 1/2 cups of flour and 1 cups of sour cream. Fold in 1 can of pineapple chunks and 1 cup of toasted shredded coconut. Pour the batter in a loaf pan, and sprinkle with the remaining 1/2 cup of coconut. Bake at 350 degrees Fahrenheit for 65 to 70 minutes.
