To make Perfect Potato Soup, cut 6 slices of thin bacon into 1-inch pieces. Put the bacon in a soup pot over medium heat, and cook until it is crisp. Remove the bacon, and pour off the grease, but do not clean the pan. Increase the heat to medium-high and add 1 diced onion, 3 diced carrots and 3 diced celery stalks. Cook for about two minutes, then add 6 small diced potatoes, and cook for five more minutes. Season with salt, pepper and Cajun seasoning if desired.
Pour 8 cups of chicken or vegetable broth into the pot, and bring it to a gentle boil. Cook for 10 minutes, or until the potatoes become tender. Whisk together 3 tablespoons of flour and 1 cup of milk, then add the mixture to the pot before cooking it for five more minutes. For a creamier soup, remove 1/2 or more of it in batches and use a blender to puree it before pouring it back into the pot. Stir in 1/2 cup of heavy cream and 1 teaspoon of minced parsley.
