A basic fudge recipe requires 1.5 cups of sugar, 5 ounces of evaporated milk, 1/2 cup of butter, and 2 cups of small marshmallows. In addition, this recipe needs 1 cup of semisweet chocolate, 1/2 cup of chopped walnuts, and 1/2 teaspoon of vanilla.
An 8-inch by 8-inch by 2-inch pan is lined with foil first and then buttered. Be sure the foil covers all the edges of the pan. Then the butter, evaporated milk and sugar are combined in a large saucepan over medium-high heat until it boils. This should take about 10 minutes. After this, reduce the heat to medium, and continue stirring for 6 more minutes. Remove the saucepan from the burner.
The marshmallows, chocolate pieces, walnuts and vanilla are then stirred into the saucepan. The ingredients should be stirred until the chocolate and marshmallows melt completely. Continue to beat the pan for a minute after this point. Then, spread the mixture evenly in the foiled pan. Score the fudge while it is still warm, and then chill the pan for 2 to 3 hours. Remove the pan when the fudge is firm, and use the foil to lift it from the pan. Cut the fudge into squares and refrigerate. This recipe makes roughly 2 pounds of fudge.
