A basic Chicken Alfredo recipe is made with chicken breast strips, grated Parmesan cheese, butter and heavy cream. It is often served over fettuccine noodles.
To make chicken Alfredo, cut 2 pounds of skinless chicken breast into strips. Season with salt and pepper and saute in a 10-inch skillet with 4 tablespoons of oil. Cook on medium heat until cooked through.
Melt 1/4 cup butter in a saucepan. Add 3/4 cup heavy cream and 1/2 cup grated Parmesan cheese and cook on low, constantly stirring. Do not allow it to come to a boil. In a large pot, bring 3 quarts of water to a boil and add 1 pound fettucine noodles. Cook according to instructions on package. Add the cooked chicken strips to the Alfredo sauce and mix together. Drain the fettuccine and cover with the Alfredo sauce and chicken. This recipe makes six servings.
Some cooks use a can of condensed cream of mushroom soup in the Alfredo sauce. Use other cheeses, such as ricotta, Monterrey Jack and even cream cheese, to give the dish a different flavor. Other pastas, such as ziti or rigatoni, can also be used. For more variety, add grilled or sauteed vegetables, such as asparagus, broccoli, zucchini, mushrooms or spinach.
