To make grilled lemon salmon fillets in foil packets heat a gas grill to prepare it for cooking. Tear out four large sheets of heavy-duty foil and set them aside. Cut 1 1/2 pounds salmon fillets into four individual serving pieces, and place one piece of fish inside of each foil section. Brush each salmon piece on both sides with 1/2 tablespoon of vegetable oil. Sprinkle pieces with 1/8 teaspoon each of salt and pepper.
Cut 1 lemon into 12 8-inch slices and place three slices on top of each piece of fish. Bring two sides of the foil together so that the edges meet, and seal into a tight 1/2-inch fold. Fold once more, but allow space for heat to expand. Fold other two sides and seal. Place fish packets onto the grill and cook over medium-low heat for 13 to 16 minutes.
After 7 minutes, rotate the packets a 1/2 turn and continue cooking another 7 minutes or until fish flakes easily with a fork. Use a knife to cut an "X' pattern across each packet, folding back the foil to allow steam to escape. Sprinkle fish with 2 tablespoons finely chopped fresh parsley.Learn more about Seafood
