To make the nutty banana bread, thoroughly mix 2 eggs with 1 1/4 cups mashed bananas, 1/2 cup applesauce and 1/3 cup buttermilk. Combine 1 3/4 cups all-purpose flour, 1 cup granulated Splenda, 1/2 tablespoon baking soda and 1/2 teaspoon salt in another bowl. Incorporate the flour mixture into the banana mixture, and fold in 1/2 cup chopped pecans. Transfer the batter into a greased 9-by-5-inch loaf pan, and bake it at 325 F for one hour or until it is cooked through.
To make the chocolate chunk banana bread, vigorously whisk 2 eggs with 1 cup mashed bananas, 1/3 cup oil and 1/4 cup milk. Mix 2 cups all-purpose flour with 1 cup granulated Splenda, 2 teaspoons baking powder, 1/2 teaspoon baking soda and 1/4 teaspoon salt. Gently stir the flour mixture into the banana mixture before folding in 6 ounces chopped semisweet baking chocolate and 1/2 cup chopped walnuts. Bake the batter in a greased 9-by-5-inch loaf pan at 350 F for 45 minutes or until a toothpick inserted into the center of the loaf emerges clean.
