To make baked mushrooms, combine 1 pound of quartered mushrooms, 1 diced onion, 1 chopped garlic clove, 1 cut green bell pepper and 2 tablespoons of chopped parsley in a baking dish with 1/2 teaspoon of Italian seasoning, 1/4 teaspoon of seasoning salt, 1 dash of pepper, 2 tablespoons of water and 4 tablespoons of melted butter. Bake these ingredients at 350 degrees Fahrenheit for 40 minutes.
To make baked mushrooms with melted cheese and crunchy, herby breadcrumbs, combine 2 thick slices of bread torn or blended into breadcrumbs with 1 small bunch of chopped flat-leaf parsley. As the dish bakes, toss 4 handfuls of salad rocket with juice from 1 lemon and extra-virgin olive oil to taste. Top the salad with the baked mushrooms.
