Many baked cod recipes call for coating the fillets with a seasoned breadcrumb mixture before baking. The cod can also be coated with cracker crumbs, lemon butter or Parmesan cheese mixed with breadcrumbs.
For a simple baked cod, preheat oven to 400 degrees Fahrenheit. Line a baking pan with aluminum foil, and lightly spray the pan with cooking spray or coat it with olive oil.
Finely chop 1/2 cup parsley and two to three garlic cloves. Gather the zest of one lemon and 1/4 teaspoon of coarse salt, and mix all of these ingredients with 1 1/2 cups of breadcrumbs.
Brush top of four cod fillets with olive oil. Press fillet into the crumb mixture. Place fillets on baking dish, breaded-side up, and bake at 400 degrees Fahrenheit until firm, which takes about 12 to 15 minutes. Serve with lemon wedges.
For Parmesan-crusted baked cod, preheat the oven to 325 degrees Fahrenheit. Mince one clove of garlic and add 1 cup of breadcrumbs, 1/2 cup chopped parsley, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/2 cup grated Parmesan cheese and 1 teaspoon lemon zest. Mix these ingredients together, and spread them on a plate. Rinse four cod fillets, and pat them dry. Rub the fillets with melted butter, and coat both sides with the breadcrumb mixture.
Place the fish on baking dish, and bake them uncovered at 325 degree Fahrenheit for 15 to 20 minutes, until fish is flaky.
