To bake cookies without flour, gather 1/2 cup almond butter; 1/2 cup peanut butter; 1/2 cup brown sugar; 2 eggs; 1/2 teaspoon vanilla extract; and 1 cup semi sweet or dark chocolate chips. Mix ingredients, and bake on a parchment-lined sheet at 350 degrees Fahrenheit for 10 to 12 minutes.
In a large bowl, stir the nut butters, sugar, eggs and vanilla until they are just mixed. Add the chocolate chips, and mix again. Line a baking sheet with parchment paper. Use two spoons to drop balls of batter about 2 inches apart onto the sheet. You can sprinkle a little sea salt on top of each cookie, if desired. This recipe makes 20 to 22 soft cookies.
For oatmeal cookies made without flour, gather 2 1/4 cups of old-fashioned oats, divided; 1 tablespoon cornstarch; 1/2 teaspoon baking powder; 1/3 cup unsalted butter; 1/3 cup granulated sugar; 1/3 cup light brown sugar; 1 large egg; 1 teaspoon vanilla extract and 1 cup chopped bittersweet chocolate.
In a food processor, pulse 1 1/4 cups of the oats until finely ground. Add the cornstarch and baking powder. Use an electric mixer to combine the butter and sugars until fluffy. Add the egg and vanilla, and beat well. Add the flour mixture and stir. Fold in the chocolate and the remaining oats. Drop the dough in 2-inch sections on a baking sheet. Bake for 15 minutes at 375 degrees Fahrenheit. This recipe makes 24 cookies.
