Some authentic Greek recipes are Grilled Lamb Chops with Watermelon-Feta Salad, Greek Meatballs and Tzatziki and Mini-Spanakopitas. Spanakopitas are essentially spinach pies made with phyllo pastry.
To make Mini-Spanakopitas, wilt spinach in a skillet and drain, then combine with feta, cottage and Parmesan cheeses. For Grilled Lamb Chops with Watermelon-Feta Salad, coat the lamb on all sides with a mixture of sugar, paprika and salt, as well as a little extra-virgin olive oil, then grill until medium rare. Serve with a salad of salted watermelon topped with soaked onions, Kalamata olives, feta cheese, fresh mint and a drizzle of olive oil.
To make Greek Meatballs and Tzatziki, combine bread soaked in milk with ground lamb or beef, fresh mint, onion, oregano, cinnamon, garlic, egg and lemon juice. Shape into balls and bake, then toast pita breads. Serve with the tzatziki, which is made with salted, drained cucumber, yogurt, dill, garlic, lemon zest and lemon juice, as well as cumin and salt.
