To make Mini-Spanakopitas, wilt spinach in a skillet and drain, then combine with feta, cottage and Parmesan cheeses. Then stir in sauteed green onions, fresh dill, fresh lemon juice, salt, black pepper and lightly beaten egg whites. Working one at a time, place the filling onto sheets of phyllo brushed with olive oil, salt and egg white, then fold into triangles and bake until golden.
For Grilled Lamb Chops with Watermelon-Feta Salad, coat the lamb on all sides with a mixture of sugar, paprika and salt, as well as a little extra-virgin olive oil, then grill until medium rare. Serve with a salad of salted watermelon topped with soaked onions, Kalamata olives, feta cheese, fresh mint and a drizzle of olive oil.
To make Greek Meatballs and Tzatziki, combine bread soaked in milk with ground lamb or beef, fresh mint, onion, oregano, cinnamon, garlic, egg and lemon juice. Shape into balls and bake, then toast pita breads.
