Rasa Malaysia offers a recipe for General Tso's chicken on RasaMalaysia.com. The recipe involves lightly frying bite-sized pieces of chicken meat, then stir-frying the chicken pieces with garlic, scallion, red chilies, ginger and a sweet soy sauce mixture.
Marinate 10 ounces of bite-sized, boneless, skinless chicken pieces with 1/2 tablespoon of shaoxing wine and a pinch of salt for 15 minutes. In a separate bowl, mix together 3 tablespoons of Chinese rice vinegar, 2 1/2 tablespoons of soy sauce, 1/2 tablespoon of dark soy sauce and 1 teaspoon of hoisin sauce along with 1/4 cup of water, 2 1/2 tablespoons of sugar, 1/2 tablespoons of shaoxing wine and 1 tablespoon of cornstarch. Set aside.
Coat the marinated chicken generously with 1/3 cup of cornstarch. Heat oil in a pan or vat for deep-frying, and fry the chicken pieces until they turn light brown. Remove the fried chicken pieces to a paper towel-lined dish.
Heat 1 1/2 tablespoons of oil in a wok, then add 3 slices of peeled and minced ginger, 1 minced clove of garlic and 4 or 5 rinsed and deseeded dry chilies. Stir fry until the aroma of the chilies speaks, then pour the sauce in the wok, and boil until it begins to thicken. Add the chicken pieces, and toss to coat with the sauce. Add 2 stalks of cut scallions, toss a few more times, and serve immediately.
