The best apples to use in apple spice cake recipes are Granny Smith apples, although Jonagold apples can be used in conjunction with Granny Smith. One recipe calls for equal amounts of Granny Smith apples and Jonagold apples, flour, butter, walnuts and spices.
To make apple spice cake with walnuts and currants, beat 1 egg white until it foams, then add 2 tablespoons of sugar, 1/2 teaspoon of ground cinnamon and 1 cup of chopped walnuts. Spread the mixture on a baking sheet and cook at 375 degrees for 10 minutes.
While the walnuts cook, place 1 tablespoon of butter, 2 peeled and chopped Granny Smith apples and 2 peeled and chopped Jonagold apples in a saucepan, then cook covered on low for 18 minutes. Remove the cover and cook for 6 more minutes. Mash the apples.
In a bowl, mix together 1 3/4 cups of all purpose flour, 1 teaspoon of cinnamon and 1 teaspoon of baking soda along with 1/2 teaspoon of allspice, 1/2 teaspoon of cloves and 1/2 teaspoon of salts. In another bowl, cream 1 1/4 cups of sugar and 3/4 cup of butter, then beat in 1 egg. Gradually mix the flour mixture into the butter mixture, then add the apples. Stir in the baked walnuts and 1 cup of dried currants. Pour the batter into a cake pan and bake at 350 degrees for 40 minutes.
