To make Apple Cranberry Phyllo Turnovers, heat the apples in a pan set over a medium heat, along with cranberries, sugar, cinnamon and nutmeg, stirring periodically until the fruit has softened. Add cornstarch to thicken, then allow to cool. Meanwhile, brush a sheet of phyllo dough with oil and sprinkle with crushed ladyfinger cookies. Top with another sheet of phyllo and brush with oil, then cut into four strips. Place some of the cooked and cooled apple mixture at the bottom of each strip and fold along into a sealed triangle. Repeat with the other strips, and three more sheets of phyllo. Brush with oil and bake until brown.
To make the Pear and Apple Phyllo Crisp, combine chopped pecans with breadcrumbs, sugar and ground cinnamon. Place a phyllo sheet onto a parchment-lined baking sheet and brush with melted butter, followed by an even sprinkling of the pecan mixture. Repeat with four more sheets, then top with a final sheet brushed with butter and topped with slices of pear and apple. Brush with more butter, sprinkle with sugar and cinnamon, then bake until golden brown.
