To make the appetizer bites, place 24 wonton wrappers into muffin cups, and spray them with cooking spray. Bake them for five to seven minutes at 350 degrees Fahrenheit. In a mixing bowl, combine 1/2 cup each of Monterey Jack cheese, cheddar cheese, chopped pepperoni, ranch dressing, and a mixture of green and red peppers. Fill the wonton cups with the mixture, and bake them for an additional six to eight minutes until the cheese melts.
