To make Amish-style tomato soup, according to the Amish Shop, boil 1/2 a bushel of ripe tomatoes with 2 bunches of chopped celery and 4 chopped large onions for 30 minutes. Add 1 cup of sugar and 1 cup of butter. Season with 1 teaspoon of black pepper and 1/2 teaspoon salt. Mix 1 cup of clear jel with a little water, and add this mixture to the boiled vegetables. Bring the soup to a boil. Then can and seal.
Alternatively, to prepare Amish tomato ketchup, mix 3 quarts tomato juice, 1 pint of apple cider vinegar, 4 to 5 cups of sugar, 1 teaspoon salt, 1/4 teaspoon pepper, 3 drops of clove oil, 5 drops of cinnamon oil and 4 tablespoons of ground dry mustard, as noted on Food.com.
