The recipe yields 3/4 cup of sauce and is best prepared with a food processor chopper. Other ingredients can be substituted in if one ingredient is not available, such as sweet pickle relish for cornichons and sauvignon blanc vinegar instead of Champagne vinegar.

Tartar Sauce

This tartar sauce nicely compliments fish such as catfish, and can be made without a food processor if the chef doesn't mind it being a bit chunky. Tabasco can be added for additional spice and zest and spicy brown mustard can supplant grain mustard. Some reviewers added freshly chopped dill for additional flavor, and lemon juice to contribute some bite to the recipe.

  • 1/2 cup mayonnaise
  • 2 tablespoons pickles or cornichons, diced
  • 1 tablespoon Champagne vinegar or white wine vinegar
  • 1 tablespoon capers
  • 1 teaspoon coarse-grain mustard
  • Pinch, kosher salt
  • Pinch, freshly ground black pepper
