The eight schools that offer full-time courses at Humber College are the School of Applied Technology, the School of Creative and Performing Arts, the School of Health Sciences, the School of Hospitality, Recreation and Tourism, the School of Liberal Arts and Sciences, the School of Media Studies and Information Technology, the School of Social and Community Services and the Business School.

The 16 degree programs that are available at the college include three Applied Arts degrees: criminal justice, film and media production, and paralegal studies. There are 10 Bachelor of Commerce degrees: accounting, e-business marketing, fashion management, finance, human resources management, international business, management studies, marketing, supply chain management and hospitality and tourism management. There are also bachelor degrees available in child and youth care, creative advertising, digital communications, industrial design, international development, interior design, journalism, music and public relations. Finally, two nursing degrees are offered: regular and second entry preparation.

The 1,400 continuing education courses cover a wide range of fields. Humber College offers over 200 certificate and diploma programs.
