Some recipes for yellowtail fish are yellowtail with lime and ginger, yellowtail with herb butter and yellowtail with salsa. Yellowtail with lime and ginger requires the most ingredients and is cooked in an oven, while the other two are simpler recipes that use a grill.
For the lime and ginger flavor, first salt and pepper the fish in a skillet, and bake it at 400 degrees Fahrenheit for three minutes. Turn the fish, and cook for five more minutes, then remove the skillet, and transfer the fish to another plate. Mix sliced ginger, lime juice, diced green onions and tomatoes, red wine, heavy cream and butter in the skillet, reduce, and serve over the fish.
To create the herb butter grilled yellowtail, butterfly the fish and season with salt, pepper and lime juice mixed with melted butter. Grill with the skin side down until the fish flakes easily. Mix chopped herbs into the rest of the butter, and spoon over the fish before serving.
Combine olive oil, minced garlic, salt and pepper, then place the fish in this mixture, and allow it to marinate for 30 minutes before cooking. Grill over medium heat for two minutes, and then turn the fish for even cooking. Serve with salsa and crumbled crisp pork rinds.
