To make KFC-style chicken tenders, dredge chicken breasts cut into strips in an egg wash and then in seasoned flour. Fry the strips in a deep fryer with shortening preheated to 350 degrees Fahrenheit until the strips float, remove them from the fryer, and drain excess oil before serving.
To make the egg wash for the chicken strips, add 1 beaten egg and 1 cup of milk to a mixing bowl and combine until the mixture is consistent in color. In a separate mixing bowl, combine 2 cups of flour, 2 1/2 teaspoons of salt, 3/4 teaspoon of pepper, 1/8 teaspoon of paprika, 1/8 teaspoon of garlic powder and 1/8 teaspoon of baking soda until the ingredients are fully mixed together. Dip each chicken strip first in the egg wash, and then into the flour mixture, making sure that you fully coat each strip and that any excess flour falls off, then add each strip to the deep fryer. Fry the strips in small batches to prevent them from sticking to each other. When the chicken strips turn golden brown and begin to float, remove them from the fryer and place them on a rack to drain any excess oil before serving.
