For baked sea bass, organize 12 ounces of sea bass, 2 tablespoons lime juice, 1 tablespoon shallot, 5 teaspoons olive oil and 1 tablespoon ginger. Also gather 1 1/2 tablespoons soy sauce and 1 tablespoon fresh-chopped cilantro.
Begin by preheating the oven to 500 F. Add the lime juice, ginger, soy sauce, shallot and cilantro to a small bowl, along with 3 teaspoons of the olive oil. For peak flavor, use real lime juice and freshly chopped and grated ginger. Whisk all the ingredients together into a sauce and momentarily set it aside.
Brush the rest of the oil inside a 9-inch baking dish and place the fish inside. Turn the fish over once to ensure a modest coating of the oil. Season the fish with salt and pepper to taste, drizzle it with 1/2 tablespoon of the prepared sauce and place it inside the preheated oven.
