Make barbecue sauce for pulled pork by combining apple cider vinegar, ketchup, brown sugar, mustard and molasses. The sauce can be slightly cooked or used as-is after mixing. Make a vinegar-based sauce by omitting ketchup and molasses.
To make barbecue sauce, mix 1 1/2 cups of cider vinegar, 1 cup of yellow or brown mustard, 1/2 cup of ketchup and 1/3 cup of packed brown sugar along with 2 smashed garlic cloves, a teaspoon of kosher salt, a teaspoon of cayenne and 1/2 teaspoon of freshly ground black pepper. Pour the mixture into a saucepan, and set it on the stove over medium-high heat. Bring the mixture to a gentle simmer while stirring for 10 minutes until the sugar has dissolved. Remove the mixture from the heat, and set it aside to cool.
To make a lighter vinegar-based sauce, mix 2 cups of apple cider vinegar, 2 tablespoons of dark brown sugar and 1 tablespoon of Texas Pete Hot Sauce along with 1 teaspoon each of red pepper flakes, freshly ground black pepper and kosher salt. Add the mixture to a small nonreactive saucepan, and bring it to a boil, whisking until the sugar and salt are completely dissolved. Remove the mixture from the heat, and set it aside to cool before using.
