Make a taco salad by combining cooked and seasoned ground beef with lettuce, tomatoes, shredded cheese, coarsely crushed tortilla chips and ranch dressing. It is a quick and simple dish that gives all the flavor of tacos without having to stuff the shells.
Start the taco salad by browning 1 pound of lean ground beef with 1 chopped onion in a medium-size skillet. Drain the grease from the skillet and stir in a 1-ounce package of taco seasoning and 1/4 cup of water. Bring the mixture to a boil and simmer it on medium-low heat for about three minutes.
Roughly tear 10 loosely packed cups of romaine lettuce and divide the lettuce into 4 equal parts with each on a separate plate. Mix together 2 cups of diced fresh tomatoes, 1 cup of shredded cheddar cheese and 2 cups of tortilla chips broken up into medium-size pieces. Top the plates holding the lettuce evenly with the meat mixture and the vegetable and chip mixture. Drizzle ranch dressing over the top to taste.
Sliced green onions, jalapeno peppers and pico de gallo are excellent optional toppings to add some flavor to the salad. For easier serving, you can prepare the ground beef and onion mixture ahead of time and refrigerate it until you are ready to make the salad.
