A good recipe for mincemeat pie filling uses apples, golden raisins, dried figs, dried cherries and beef suet. These ingredients are ground in a food processor with spices to create the filling.
Add two peeled and cored Granny Smith apples, 4 ounces of chopped dried figs, 2 ounces of dried cherries, 8 ounces of golden raisins and 1 ounce of chopped crystallized ginger into a food processor. Mix in the zest from one orange and one lemon, 1/2 teaspoon of freshly ground nutmeg, 1/4 teaspoon of freshly ground allspice and 1/4 teaspoon of freshly ground cloves. Pour in 1/2 cup of brandy and 2 ounces of chopped beef suet. Pulse the mixture several times until it forms a roughly ground paste. Place it in the pie crust.
Another good mincemeat pie filling recipe uses currants, dried cranberries and dried apricots in conjunction with the apples and cherries. Chop 1 1/2 pounds of Granny Apples into small pieces in a food processor, and place in a saucepan. Put 1 cup of dried currants, 3/4 cup of golden raisins, 3/4 cup sweetened dried cranberries, 3/4 cup dried apricots and 1/2 cup of dried cherries in the food processor and pulse as well. Transfer the diced fruit to the saucepan. Stir 1 cup of sugar, 2 tablespoons of light molasses, 2 tablespoons of cornstarch, 2 tablespoons of butter, and grated lemon and orange peel into the fruit mixture. Add 2 tablespoons of dark rum and 2 tablespoons of brandy. Season with 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground allspice, 1/4 teaspoon of ground cinnamon, 1 pinch of ground cloves and 1 pinch of sea salt. Simmer everything over medium-low heat and stir often. Remove from heat once the mixture thickens.
