Thinly slice one small red cabbage and half a small onion. Shred two carrots, and add to the other ingredients along with two segmented oranges. Navel oranges are a classic, Valencia ones add a tart, delicious flair, and blood oranges turn the salad into an exotic treat. Drizzle the salad with a little olive oil, a dash of honey and a pinch of salt.
To make the crunchy yogurt slaw, shred one medium cabbage and two medium carrots. Add to a bowl with half a small, thinly sliced onion, 1 teaspoon of celery seeds, 1/4 teaspoon of salt, and herbs or spices of choice. Black pepper, thyme, and fresh chives are excellent additions.
