Mini pumpkin spice loaves and chocolate chip banana mini loaves are both easy mini bread loaves recipes. Both bake in under an hour and yield several mini loaves.
To make 12 mini pumpkin spice loaves, beat 3/4 cup softened and unsalted butter with a mixer until creamy, then add 3 cups sugar and 3 large eggs. Combine 3 cups all-purpose flour with 2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg and 1 teaspoon ground cloves into a medium bowl. Add 1 cup toasted chopped pecans and 3/4 cup golden raisins, then add the butter mixture.
Stir in 1 teaspoon vanilla extract. Spoon batter into 12 greased and floured 5-inch-by-3-inch mini-loaf pans, and bake for 45 minutes at 325 degrees Fahrenheit. Cool in pans on a wire rack for 10 minutes, then frost the loaves with cream cheese icing.
To make three chocolate chip banana mini loaves, preheat oven to 350 degrees Fahrenheit, then grease and flour a 5-3/4-inch-by-3-inch mini loaf pan for each loaf. Add 3/4 cup sugar, 1/2 cup softened Land O Lakes Butter and 2 Land O Lakes Eggs into a bowl, beat at medium speed until creamy. Add in 1 cup mashed bananas and 1/2 teaspoon vanilla, beat at low speed, and stir in 1 1/2 cups all-purpose flour, 1 cup real semi-sweet chocolate chips, 1/2 teaspoon baking soda and 1/2 teaspoon salt.
Spoon batter into pans, and bake for around 38 minutes. Let stand for five minutes, remove from pans, and cool completely. Wrap each in plastic food wrap, and store refrigerated.
