Begin by heating 1 tablespoon of olive oil in a large pot over medium heat. Chop up 1/2 large onion, 2 celery stalks and 2 carrots. Cook the vegetables in the pot with the oil until the onion turns translucent. Add 2 cups of assorted chopped vegetables, such as cauliflower, zucchini or green beans, to the pot. Cook the ingredients together for an additional two minutes.
Add 1 teaspoon each of salt, thyme and oregano to the pot, and stir the vegetables until they are evenly coated with the herbs and spices.
