To make Italian chicken pasta salad, cook 3 cups of dried elbow macaroni until al dente, rinse it with cold water and allow it to drain. Toss 2 tablespoons of olive oil with the pasta, and add 1 cup of cubed rotisserie chicken, 1 cup of diced English cucumber, 1 cup of halved cherry tomatoes, 1/2 cup of chopped and pitted Nicoise olives, and 1/2 cup of diced hard salami. Mix 1/2 cup of chopped roasted red peppers, 1/4 cup of diced red onion, 1/4 cup of chopped fresh flat-leaf parsley, and 4 ounces of grated ricotta salata or crumbed feta cheese into the salad. Combine 1/2 cup of olive oil, 1/3 cup of red wine vinegar, and salt and pepper to taste in a bowl, and mix it with the salad. Allow the salad to rest at room temperature for 30 minutes prior to serving.
Make strawberry fool by pureeing 2 cups of sliced strawberries, 1/2 cup of sugar and 2 tablespoons of fresh lemon juice, and press the mixture through a sieve to remove any seeds. Whip 2 cups of heavy cream until peaks form, and fold it and the puree together. Chill the dessert before garnishing it with sliced strawberries and mint leaves.
