Some recipes from the “Steven and Chris” show include chickpea immune builder soup and crème brulee panettone French toast. Both recipes are relatively easy to prepare.
To prepare the chickpea soup, heat 2 tablespoons of grapeseed or coconut oil in a soup pot over medium heat. Chop 1 onion, 1 carrot and 1 stalk of celery, and sauté them in the pot until tender, approximately 10 minutes.
Cook 2 cups of chickpeas, and add them to a blender with 2 cloves of garlic, 1 1/2 teaspoons of dried Italian herbs, 2 whole green onions, 2 quarts of chicken or vegetable stock, and the juice and zest of one lemon. Add the sautéed vegetables and 1/2 cup of fresh parsley, and blend the ingredients until pureed. Transfer the puree back to the soup pot, and reheat it. Season the soup with sea salt and ground black pepper to taste.
To make the French toast, melt 1/2 cup of unsalted butter with 1 cup of packed Demerara sugar and 2 tablespoons of corn syrup. Pour the mixture into a baking dish. Cut 1 whole loaf of panettone bread into wedges, and layer it into the dish. Mix together 1 1/2 cups of whipping cream, 5 large whisked eggs, 1 teaspoon of vanilla bean seeds and 2 tablespoons of Limoncello, and pour the mixture over the bread.
Chill the dish in the refrigerator overnight, and then bring it back to room temperature before baking it for 35 to 40 minutes at 350 degrees Fahrenheit.
