The cheese crisps are an easy and tasty snack prepared by crushing 2 cups of spicy cheese nips in a food processor until they are coarsely ground. Mix the nips in a medium-size bowl with 1 cup of shredded Colby and Monterrey jack cheese blend. Place the mix by heaping tablespoons 2 inches apart on a parchment-lined baking sheet. Place the baking sheet in the oven for 12 minutes at 400 F.
Make the breakfast hash by heating 2 tablespoons of oil in a small skillet that has an oven-safe handle. Add 1 large sweet potato, shredded, and salt and pepper to taste. Cook the potatoes on the stovetop for about 10 minutes while stirring them occasionally. Stir in 1/2 cup of tomato sauce, and dig a well in the middle of the mixture. Crack 1 egg into the middle, and place in the oven for about five minutes at 400 F, or until the egg is cooked.
