This is a basic cannoli filling recipe I use, for these very delectable desserts. I love them just with the basic cheeseand sugar, but my family likes the chocolate and dried fruit cannolies. Here is my recipe: 16oz. ricotta cheese, 1 c. powdered sugar. That's all you pu in it. Drain the cheese in a sieve, for 20 minutes or so, and push the water out with the back of a spoon. . bowl, mix the cheese and the sugar,very well. You may use a mixer on low, but don't over mix. If you want to add chocolate chips, dried apricots, dried pineapple, etc, now is the time to mix it in. Put the cannoli filleng in a pastry bag, or if you don't have one, use a zip lock freezer bag. Close the bag tightly, and cut a hole in the bottom corner, and fill your cannoli shells.
