Rock salmon, (also called
Rock eel,
Flake, and
Huss in the UK) is the flesh of the
Spiny dogfish or the
bull huss (
Scyliorhinus stellaris).
Consumed in many European countries, rock salmon is sold by
fish and chip shops in the UK. However, the Spiny dogfish is now an endangered species due to
overfishing, and is considered Critically Endangered on the
IUCN Redlist.
