desserts made by freezing liquids, semi-solids, and sometimes even solids. They may be based on flavored water (
sorbet,
snow cones, etc.), on fruit purées, on milk and cream (most
ice creams), on
custard (
frozen custard and some ice creams), on
mousse (
semifreddo),
