Calf's brains

Calf's brains is a traditional delicacy in Europe. It is the brain of a calf consumed as meat. It is primarily a European dish, notably in France, Germany, England and Italy where it is a traditional Christmas dish.

History

There are several possible origins, including several legends.

Preparation

There are many ways to prepare Calf's brains. Alexandre Dumas described nine different recipes in his Grand Dictionnaire de la Cuisine. There are also a wide variety of Italian recipes, notably testa di Vitello alla Sorrentina and testa di vitello in polpette.
