Einstein Bros originated from Boston Chicken or Boston Market. Boston Market was looking for a way to enter the breakfast market, and they came to the conclusion that bagels were the way to go.

Currently, Einstein Bros. Bagels is owned by Einstein and Noah Corp., a wholly owned subsidiary of Einstein Noah Restaurant Group, Inc., previously known as New World Restaurant Group, which also owns Noah's Bagels, Manhattan Bagel, Chesapeake Bagel Bakery, Willoughby's Coffee & Tea, and New World Coffee.

Products

Einstein Bros. Bagels offers two primary menu items: bagels and coffee. The store also offers sandwiches, panini, wraps, and yogurt. It also offers an array of desserts.

Current bagel flavors include Asiago Cheese, Blueberry, Chocolate Chip, Cinnamon Raisin, Cinnamon Sugar, Cranberry, Egg, Everything, Garlic, Good Grains, Honey Whole Wheat, Onion, Plain, Potato, Poppy Dip'd, Pumpernickel, Sesame Dip'd, and Sun-Dried Tomato. Not all varieties available at all locations.

Gourmet Bagel flavors include Green Chile, Six Cheese, Spinach Florentine, and Dutch Apple.
