Caşcaval (kaʃ.ka'val) is the traditional name for a specific semi-hard cheese made in Romania, quite similar to the Italian Caciocavallo cheese.

The term is often used by extension as a generic name for semi-hard yellow cheeses such as emmental, gouda and cheddar, that look similar to the original caşcaval.

As of 2005, the following types of caşcaval are Protected designation of origin products of Romania:
